Cheesy Mushroom (Continental Style)

Description 

This is a fast and easy vegetarian recipe to make continental style food at home. If you like mushrooms and continental flavors... this may turn out to be a good option (given cheese, ginger, and oregano) and can be served with Roti/Chapatti (Indian bread) or bread.

I did refer to Tarla Dalal's recipe on the given link, however, I made my alterations to it so that it suits my purpose :)

Grated cheese for cooking. In India, you may use "AMUL" brand cheese block(s).

Cut the chili into large pieces. Avoid using red chili powder as it will change the gravy color.

1. Fry Pan with Lid

Procedure

1. Heat a pan on low flame. Pour oil (or use non-salted butter) and let it get warm-up.
2. Add onion, garlic and green chilies, and saute till the onion turns golden in color. This should take around 2-3 minutes.
3. Now add mushroom into the pan and saute it with a spatula. 
4. Cover the pan with a lid/plate and let it cook for 1 minute. Repeat this step again 2-3 times such that the mushroom cooks well. The mushroom slices will shrink (to half the size) as it loses water. If you feel that mushroom of sticking to the pan, add a little bit of oil.
5. Add a tsp of flour to the pan. While adding it make sure to sprinkle it all over the pan to avoid making lumps. Using the spatula, mix it into the ingredients in the pan. Break lumps if any.
6. Add milk (at room temperature) into the pan and stir it well till it comes to boil.
7. Add oregano, parsley, mint, black pepper, and stir well. 
8. Add cheese to the gravy to give it that cheesy smell and texture. Mix it well into the gravy.
9. I had also used Garlic Bread Seasoning (around 1 tbsp) that you get in the market.... it gives that aroma of garlic into the gravy. The key ingredients in the seasoning are oregano, garlic, onion, salt, and chives.
10. NOW ADD SALT AS PER TASTE. Don't add salt early in the process else the milk will go sour.
11. Cover the pan with lid (while on low flame) for about 2 minutes.
12. Remove from heat and serve with any meal.

  3. Today was the 4th attempt, and it worked :) Children have grown but still liked the recipe.
